We love mashed potatoes, but I find it tiring to stand over a huge pot of boiling water, especially in the summer when it is so darn hot! This recipe is my fix for that! The potatoes cook in the crockpot, then you just whip them with your mixer. Kurt thinks they taste like restaurant mashed potatoes. :). Here's what you'll need. 2 - 2 1/2 lb. potatoes, scrubbed. 1 teaspoon garlic salt. 1/2 to 1 cup milk. Cut the butter into small pieces.

Friday, April 30, 2010. Day 119: Mint Sherbert. I came across this recipe in a book from the library, and it sounded too good to pass up! Here's what you'll need. 1 1/4 cups water. 2 1/4 oz fresh mint. 1/2 cup lemon juice. Heat the sugar to boiling in a sauce pan. Boil 2 minutes. Remove from heat and let cool slightly. Sunday, January 31, 2010. Day 31: Rosemary and Parmesan Polenta. Wow I've made it a whole month! Only 11 more to go! I've always been a bit intrigued by polenta. I've seen the premade roll-type in the grocery, and chefs on FoodNetwork use instant polenta, which I've never been able to find. I've always thought polenta would be a nice alternative to mashed potatoes, and we found that is was! Here's what you'll need. 2 3/4 cups chicken stock. 1 1/2 cups milk. 3 minced garlic cloves. 1 1/2 cups cornmeal.

Monday, May 31, 2010. Day 150: English Muffin Pizzas. I remember making these as a kid, so Amelia and I make them somewhat often. :). Here's what you'll need. 1 English muffin for each person. Tomato sauce or Pizza sauce. Toppings of choice (pepperoni). Preheat oven to 350*. Split each muffin in half. Place on a foil lined baking sheet. Spread sauce on each half. Sprinkle with cheese. We put on a little bit of basil too. Bake at 350 for about 10 minutes, or until bottoms are toasty and cheese is melted.

Jerry Shanna Jordan Johnson. Friday, September 30, 2011. The baby of the family turns 3 today! That just sounds crazy to me! My kiddos are growing up so fast. Johnson keeps Jerry and I on our toes. The child really has no fear. He is talking so much. Loves to color (looks like he may be left handed.just like daddy). Sunday, February 28, 2010. Day 59: Pad Garlic and Black Pepper with Chicken. Third and final post of the Thai feast! Here's what you'll need (One serving). 1 boneless, skinless chicken breast, diced into bite sized pieces. 1/4 c garlic cloves, smashed (about 1/2 head). 3/4 tsp. palm or white sugar. 3/4 tsp. black pepper. 1 3/4 tsp. soy sauce. 1-2 tbsp. cooking oil, enough to coat pan. 2-3 tbsp. water. Break garlic cloves off the head. Add the sugar, pepper and soy sauce to the pan. Now for the changes*.
